Oettinger spent his freshman year at Lakeville North High School before committing to the USA Hockey National Team Development Program (USNTDP). He played two seasons with the USNTDP Juniors while committing to Boston University.
Following his junior collegiate season, the Dallas Star drafted him in the first round, 26th overall of the 2017 NHL Entry Draft. He was assigned to their AHL affiliate, the Texas Stars after signing a three-year, entry-level contract with the team.
On 3rd March 2020, he earned his first NHL call-up to replace Ben Bishop who suffered from a lower-body injury. Subsequently, he made his NHL debut in the 2020 Western Conference Final against the Vegas Golden Knights.
